I’ve used my smoker a dozen or so times since I’ve gotten it about six months ago. And let me tell you, I love it. I have another off set smoker that is NOT a reverse flow smoker and the difference between the two is remarkable. The non reverse smoker is difficult to use and maintain even temperature. The reason is, the area next to the fire box gets so hot and the fire pulls thru the main chamber and is either burning your meat or catching it on fire. The first time I used it, I had chicken on there. I didn’t think the fire would go thru the main chamber and actually touch the meat. So after about two minutes of it being on there, the chicken was blackened and on fire. I seriously thought the whole thing was going to catch on fire. I ran inside and got a bag of flower to throw on the chicken just in case it did. Luckily I was able to take the chicken off without it catching on fire. I had to quickly pull the whole rack off and get it away from the smoker. Needless to say the chicken was not edible. With the Shirley Reverse Smoker, I don’t have that problem. I let the smoker get up to an even temperature and then put the chicken on and whatever I’m smoking without any worries of it catching on fire inside the main chamber. It cooks very evenly and there isn’t a too smoky taste on the meat compared to other smokers. I think it is the best smoker out there for your hard earned money. I’m definitely going to buy another one. Maybe a 30×80 trailer with a Chargrill on it and two burners. That would be the ultimate one for me.
